4. Honing

Before the thorough final inspection the knife is honed, the process by which it receives the necessary sharpness. Today honing is carried out with fine grindstones on special machines or on a felt disc. Thus the honed area achieves a previously unattained degree of evenness from the tip to the bolster which, in combi nation with the hardness of the steel, ensures a so far unthinkable degree of cutting edge retention (CER). Monitored by laser, each knife is sharpened to the optimum cutting angle. Nowadays knives are sharper and retain their cutting ability much longer.

The forging process provides convincing evidence of the Company´s competence as a knife manufacturer. This process allows these advantages:
